Pesto Recipe (for 2 persons)

80 basil leaves (no stems, leave should be the size of a thumb)
1 large garlic clove
2 T. raw pine nuts
2 T. parmesian cheese (heaping)
2 T. olice oil, extra virgin
no salt

Using a COLD marble mortar crush basil leaves, then add pine nuts and parm cheese, finally add the oil. HINT: If you use a blender the flavor is reduced.

After tasting the result of the demonstration, several members of the group debated purchasing marble mortars. A purchase which would definitely impact the "travel light" suitcase.
